The ISO 22000:2018 standard applies to all companies in the food sector (responsible for the production, packaging, transport, storage, serving and marketing of food products), regardless of their size and complexity.
The ISO 22000:2018 standard includes the principles of HACCP and the requirements related to the safety of the entire food chain: from the internal level of the organization, to the relationship with suppliers and customers, storage conditions, access to information about the food products/services provided, the development of new products /food services.
HACCP represents a set of principles regarding food safety, being an English acronym for “Hazard Analysis and Critical Control Point”, in translation: Risk analysis and determination of critical control points. HACCP is based on the Codex Alimentarius, developed by the UN Food and Agriculture Organization and the World Health Organization.
